This study was conducted to investigate physical properties and rheology of stem-cutting harvest type non-head leafy green vegetables(Chinese leek, Crown daisy and Chamnamul). Test materials were divided into two type models through the investigation of thickness of stem part and stress-strain behavior, stress relaxation, and deformation model equation and deformation recovery rate according to stress relaxation were calculated to study physical properties and rheology of the materials through measuring rupture load, deformation, and stress by test. Also, the results from measurementof recovery time after deformation of the test materials using a super high speed camera were almost liner recovery deformation in Chinese leek and non-liner recovery deformation in Crown daisy and Chamnamul. Moreover, the recovering time to permanent deformation was 0.026 second in Chinese leek, 0.046 second in Crown daisy, and 0.05 second in Chamnamul, they were recovered. Deformation recovery time calculated by deformation model equation assumed test materials as liner deformation was 0.17 second in Chinese leek, 0.12 second in Crown daisy, 0.15 second in Chamnamul.
