Effect of Substituting Rice for Wheat in Feed Concentrate on Growth Performance, Blood Metabolites, and Meat Quality in Late-Fattening Hanwoo Steers

This study investigated the effects of substituting rice for wheat in feed concentrate on the growth performance, blood metabolites, and meat characteristics of Hanwoo steers. Twenty-four late-fattening Hanwoo steers were randomly assigned to two groups: a control group fed a commercial concentrate, and a treatment group fed a modified concentrate in which 33% of the wheat was replaced by rice. Average daily gain, dry matter intake, and feed conversion ratio were no different in the treatment and control groups (p > 0.05). Substituting rice for wheat did not significantly affect blood metabolite concentrations, carcass characteristics, or the physicochemical composition of longissimus muscle (p > 0.05), and no significant inter-group differences in surface color measurements were observed (p > 0.05). TBARS levels in longissimus muscle from the control group increased significantly after 6 days of storage (p < 0.01), whereas no differences were observed in other physicochemical properties. These findings suggest that partial substitution of wheat with rice in concentrate feed does not adversely affect the growth performance or carcass characteristics of late-fattening Hanwoo steers and may improve the storage quality of the longissimus muscle.
