초록
Among the microorgani는 of twenties isolated from the compost and soil, an alkali tolerant Bacillus sp. was chosen as a strain of tofu-residue solubilization. The alkali tolerant Bacillus sp. showed the high values of soluble solid matter and protein yield in the mineral salts media containing on carbon and nitrogen source. The optimal composition of the mineral salts medium was determined by 3-D response surface methodology and were obtained at 1.33% of MgSO4 7H2O, 1.66% of KC1 and 2.19% of KH2PO4 : K2HPO4 (1:1) in the medium for maximum soluble solid matter and 1.08% of MgSO4 7H2O, 0.48% of KC1 and 1.58% of KH2PO4 : K2HPO4(1:1) in the medium for maximum protein yield. Under these conditions, the maximum values of the soluble solid matter and protein yield were 53.79g/L and 87.12%, respectively.
