Effect of High Oxygen Modified Atmosphere Packaging on Quality and Marketability of Leaf Lettuce

This study was conducted to investigate the effect of high O2 concentration with two types of film on quality and marketability of leaf lettuce. Changes of gas composition in the packaging were various by the initial O2 content and packing materials during storage. The gas composition in the packaging changed to low O2 and high CO2 levels as storage period extended. The low O2 content in barrier film induced low O2 injury and off-odor of leaf lettuce. However, high O2 content (40% O2) in barrier film prevented effectively the physiological injury by low O2 condition even if the weight loss increased and total soluble solids content decreased slightly. The marketability of control treatment was lost by weight loss and decay firstly though the low O2 injury was not induced. On the other hand, there is no significant difference between air and high O2 treatment in permeable film.
